Melting moments are one of my favourites. Perfect with a cup of tea, they literally melt in your mouth. They’re also ridiculously easy to bake. I found this recipe while searching for melting moments with jam. The recipe yields 5 large biscuits but I prefer to make 8-12 smaller ones.
Melting Moments
Ingredients
180g butter
60g icing sugar, sifted
60g custard powder
1 teaspoon baking powder
180g plain flour
Vanilla Buttercream Filling
60g butter, softened
1 teaspoons vanilla bean paste (vanilla essence is fine but vanilla bean paste is another level)
1 cup icing sugar, sifted
1/4 cup raspberry jam*
*The actual recipe includes a raspberry jam recipe but a jar of good quality raspberry conserve is more than adequate.
Method
1, Preheat oven to 180°C. Line two oven trays with baking paper.
2, Cream the butter for 2 minutes. Add the icing sugar and custard powder and beat until combined.
3, Sift the baking powder and flour together then add to the dough and mix well.
4, Roll teaspoon sized portions into balls and place them on the lined oven trays. Flatten them with a fork and bake for 8-10 minutes or until slightly golden around the edges. If you’re unsure, check the bottom of the biscuits, if the bottom is golden, they’re ready to come out.
5. Remove them from the tray and place them on a wire rack to cool.
Vanilla Buttercream Filling
1, Beat butter and vanilla bean paste together with an electric mixer.
2, Slowly add the icing sugar and beat until all ingredients are combined.
Build a biscuit
1, Spread jam on half the biscuits and vanilla bean filling on the other half.
2, Sandwich the two halves together and enjoy.
Please note, I may have indulged in a little bit of piping action for the filling in this picture but it’s not at all necessary. They’re just as yummy with a large amount of filling smeared on with a knife…or a spoon.
Also know that it is okay to pull them apart and eat them as two separate and equally yummy biscuits with a little bit of jam and filling on each.
